Welcome to La Cucina Anna Maria. I'm Anna Maria De Freitas, the owner of the Harrison House Suites, the Tucker House Inn and Coho Restaurant in Friday Harbor, San Juan Island. Here I am in the middle of the Pelindaba Lavender Fields. Pelindaba is the premier producer of lavender plants, essential oil and hand made products made of lavender. Today, I'm going to demonstrate a recipe for grilled pineapple with a butter rum glaze. So, I have six tablespoons of butter in my pot and we're going to melt this in just a few moments when we go to the grill. I made a lavender syrup, so this is made with equal parts of sugar and water and some lavender buds. So, this is the culinary lavender that's been dried. And if you look to my left shoulder, you'll see the green rows of culinary lavender. They've already been harvested, they were purple to begin with. And then, when the buds have one to two flowers that are open, it's time to harvest them. Because you want to harvest it before the oils begin to run. So, it tastes really delicious. So, I took some of these culinary lavender buds, added them to my simple syrup. And then, I boiled it until the sugar dissolved and then, I let it steep for about a half hour and then, I strained it. So, and this is what I ended up with. So, I'm going to add a little bit of this lavender syrup to my butter and then, I'm going to add some spiced rum. And then, I'm going to go to the grill and I'm just going to let this melt. And then, I'm going to put my pineapple on the grill and we're going to glaze it. So, I'm going to put my pineapple on the grill. And I'm going to brush it with the glaze. So, we need to be a little bit patient to let the pineapple caramelize. I'm going to turn the pineapple, so we can get some grill marks. O.k., it looks like we're almost there, that's a nice caramelization on both sides of the pineapple. And then, we'll plate this. We serve grilled pineapple and roasted pineapple a lot for, at the end for breakfast, it's the prefect winter dessert. And this would also be really perfect with a little ice cream on top, perhaps even some lavender ice cream. So, I have some toasted pecans to put on the pineapple. Lavender works really well with nuts, walnuts, pistachios, almonds, Brazil nuts. But I though with the sweetness of the rum and the lavender, some toasted pecans would work really well.
