Red velvet cake is a moist and tender cake that is traditionally served for weddings (as the groom's cake), holidays and special occasions in the South.

If you've never had red velvet cake before, you owe it to yourself to try this recipe. It's light and tender and has just a hint of chocolate flavor.
The recipe does call for a lot of red food coloring. If you prefer, you can use a natural red food coloring made from beet powder (you can find it at health food stores, such as Whole Foods Market). Alternatively, you can just omit the food coloring. The cake won't be red, but even without the red hue, this cake is amazingly light and tender.
