1Buy twice as many shells as you plan to use, since there may be some breakage. Sort through the shells and only use those that are intact.

Fill a large pot with warm water. Add a dash of salt and a drop of oil to the water and put on the lid. Place the pot on the stove and turn the heat up to its highest setting.

Bring the water to a rolling boil. Remove the lid and gently place the shells into the pot. Stir the pasta once all of the pieces are in the water. Keep the lid off the pot.

Reduce the heat of the burner to a medium to medium-high heat. Cook the pasta for 10 minutes, or until the pasta is tender but firm.

Place a colander in the sink. Pour the pot of manicotti noodles and water into the colander. Rinse the noodles with cold water. Separate the noodles, if you are not going to stuff them immediately, to prevent them from sticking together.

Stuff the manicotti shells according to the recipe directions. Bake as directed.
