While it seems like this is a high ratio of fats, these are mostly good fats (unsaturated) that can lower the risk of heart disease. Unsaturated fats, as opposed to bad fats, add flavor and make people feel full without negatively affecting the heart.
- According to Pistachio Health, pistachios have high levels of beta carotene and gamma tocopherol---all antioxidants---which help reduce cholesterol levels by helping the body decrease oxidation of bad cholesterol. Pistachios also contain lutein and zeaxanthin, which promote eye health.
