Okay so today we are going to make kimchi chigae which is my mothers personal favorite stew. It is a Korean stew chigaes are all stew, usually all stews in one pot. Sometimes if you go to restaurants it is a stone pot stew and they are usually served over rice with other kinds of variant accouterments. What is going to go into our stew today is we are going to have some scallions, we are going to have some zucchini, we re going to have peppers, green and red, we are going to have carrots, onions, tofu, we are going to add some swiss chard for greens, and what primarily flavors kimchi chigae is the kimchi. When you are using a kimchi if you can get the sourness kimchi you sort of make this soup with kimchi that might be just a little bit to sour for you to power it, you chop it up and put it in the soup and it flavors it and it is really delicious combination. so let's get started.
