Chanukah is an eight-day festival of lights, which begins on the eve of Kislev.
It is considered a celebration of the triumph of light over darkness.
There are many culinary traditions attached to Chanukah; here are just a few: Items you will find on the menu during Chanukah are Latkes, Cheese Latkes, Rumanian Zucchini Potato Latkes, Jelly Doughnuts, Apple Latkes, Ale Pudding, and Caribbean Boniato Latkes.
For apple latkes you will take 4 tart apples, 2 tablespoons of brown sugar, 3 tablespoons of brandy, 2 large eggs, 2 tablespoons vegetable oil, and 1 cup flour, 1 cup water to combine together.
The apple slices are mixed in a bowl with the brandy and sugar.
You will then mix the egg yolks with the oil and salt, mixing in the flour, adding water as you beat the dough.
Each part must sit for at least one hour at room temperature.
Then you will add the egg whites to the batter.
Heat 1 cup of oil in a pan then coat the apples in batter and dip into the oil.
They should be golden brown.
Once drained on the paper towel you will sprinkle them with confectioners' sugar and serve.
Potato pancakes are also on the menu during Chanukah.
Most menu items seem to be fried foods during this holiday.
Most cooks prefer olive oil to other types of oil, as that is the tradition.
